Recipe: One pot parmesan pasta

This one pot dish can be made in fewer than 20 minutes with minimal cleanup, and costs about $8.

Adjust the parmesan to your taste. This serves four. You can also double the recipe; it makes good leftovers.

  • One pound ground Italian sausage, or one pound ground meat with Italian seasoning
  • ¼ to ½ cup grated parmesan cheese
  • ½ box (2 ½ cups dry) shell pasta (you can substitute penne or rotini)
  • ½ bag frozen broccoli florets
  • Salt and pepper to taste

In a large pot, cook the Italian sausage until browned, drain and set aside in a separate dish. In the same pot, bring four cups water to a boil and cook the pasta according to the package directions.

Did you know that the starch in the pasta reduces the boiling point? After adding the pasta to the boiling water, reduce heat to medium-high to keep your pot from boiling over.

During the last five minutes of cooking, add the frozen broccoli to the pasta and water and return to a boil.

When the broccoli is easily pierced with a fork, drain the pasta and broccoli together.

Put the pasta, broccoli and meat back in the same pot and reduce heat to low.

Stir in parmesan cheese, and season with salt and pepper.

Feel free to substitute your favorite cheese: Romano, Asiago, and Fontina would all do well in this recipe. For a hearty meal, serve with toasted bread and a salad with a warm fruit dessert. Enjoy!
