Recipe: Apple cobbler

  • 2 cups whole grain oats (not quick cooking oatmeal)
  • ½ cup flour
  • ½ cup apple juice
  • 3 tbs. canola oil
  • ¼ cup brown sugar
  • ¼ tsp. salt
  • ½ cup nuts of your choice (walnuts and/or almonds are good)
  • ½ stick of butter, cut in ¼ inch pieces


  • 2 pounds (about 6 medium) apples, peeled cored and sliced
  • ½ cup apple juice
  • 1 cup brown sugar
  • 1 tbs. cornstarch
  • (Or you can substitute two cans of apple pie filling for the above ingredients)
  • ½ tsp. cinnamon
  • ½ tsp. allspice
  • ¼ tsp. nutmeg

Preheat the oven to 425 degrees. Put the apples and apple filling ingredients into a large bowl and mix well together, then place in a shallow layer in a 9×13 glass baking dish. Bake for 10 minutes.

If you’re just using canned apple pie filling, put the filling in the bowl and mix well with the spices. There’s no need to bake for 10 minutes at this step, so you can move directly to assembling the topping.

If you’re using fresh apples, combine the topping ingredients in a bowl while the apples are baking and mix well. Sprinkle it evenly on top of your apple layer and bake for 15 minutes. The apples will be soft and the topping will be a crisp golden brown. Enjoy!
